Ingredients:
• 40g dried porcini mushrooms
• 200g shallots
• 160g portobello mushrooms
• 250g swede
• Cooking oil
• 100ml red wine
• 200ml vegetable stock
• 3 tbsp cornflower
• 200g chantenay carrots
• 250g cooked lentils
• 25g thyme
• 2 tbsp redcurrant jelly
Method:
• Put 40g dried porcini mushroom in a heatproof jug.
• Cover with 300mo boiling water and leave for 20 minutes.
• Cut 200g shallots, 160g portobello mushrooms and 350g swede.
• Heat oil in a saucepan.
• Add the shallots, mushrooms, and swede to the pan.
• Add 4 tbsp water, 100ml red wine, reserved porcini liquid and 200ml vegetable stock.
• Stir in 3 tbsp cornflower, add porcini mushrooms, 200g chantenay carrots, 250g cooked lentils, 15g thyme, and 2 tbsp redcurrant jelly.
• Transfer to casserole pot.
• Place the potatoes on top of the hotpot.
• Cover with foil and bake for 50 minutes at gas 5, 190°C, fan 170°C.
• Remove foil and bake for a further 30 minutes at gas 7, 220°C, fan 200°C.
• And serve!
