Especially in southern Italy, it is common for extended families to live together. An important festival for the Dominicans is Guloya, held on the first day of each year to celebrate the beginning of the new year. Cooking: For 1 cup of dry chickpeas, add 3 cups of water or broth. Pour into a pot and bring to a boil. To cook, reduce heat to medium-low and simmer for 60-90 minutes or until desired tenderness is achieved. Add more water if the beans are not as tender as desired and require additional cooking time. Using soaked beans reduces cooking time by 25%. I soak 1 lb of chickpeas overnight, then rinse and soak in fresh water, changing the water until I have time to cook them in the Instant Pot. I then toss the soaked, drained beans into a large metal bowl and add water about 1 inch above the beans as they are done (from soaking) and I want to use as little water as possible to get The tastiest aquafaba possible. I add spice and do 50 million HP and natural release. Then I had the most delicious bowl of beans and broth. Since the broth is gelatinous, I then divide it and pour the broth into freezer containers, some for freezing and some for the freezer. Ah, very good.

By using a steamer, I don't have to do anything special to remove the flavor from the chickpeas themselves. (The parmesan rind might stick to the bottom, so it's in the chickpea basket - but it's easy to fish out.)
