To start "Finding the Flying Plant," Zelda will need to return to Suthorn Village after she finishes the Suthorn Ruins dungeon. Upon returning, go to the house in the very southwest corner of the town. You will know a new side quest is available because there is an old man outside with a red and white exclamation mark in his speech bubble. Go to him and start "Finding the Flying Plant" by talking to him.
Ask for the flying plant:
He wants to soothe his wife, who's afraid of the local animals, with a special plant he came across, but couldn't gather. He now admits it's a flying plant that he seeks. To complete the task in question, you must summon an Echo, yet the game does not ask you to do so. One Echo that you'll have to summon is the Peahat.
How to Obtain the Peahat Echo in Echoes of Wisdom
You may have had the Peahat Echo already if you had made some time for exploration before going to the Suthorn Ruins. If not, this will not take so much of your precious time and effort.
You'll want to head to a cave that is south of the temple entrance to the Suthorn Ruins. The Fast-Travel waypoint is midway between the temple and the cave and can be used. Just head south of the waypoint until you are at the cave shown on the map up top. Head inside of the cave and to the very end of the very first hallway. At the very end of the cave, in the clearing you'll find the Peahat.
How to Beat the Peahat:
If you only have the basic Echoes, then your friend is going to be Bind. Even with the Zol you can lock the Peahat down and let the Zol duke it out with Bind on. You should have opened up the Swordfighter Form in Suthorn Ruins, so that is also a viable option if you have the energy.
How to Find Flying Plant Rewards in Echoes of Wisdom
With the Peahat Echo in hand, head back to speak with the old man in Suthorn Village. Summon the Peahat directly in front of him and he'll react automatically. He'll be in shock to learn it's not a plant at all, but rather a monster. He will, however be grateful that Zelda took the time to complete the quest. In return for doing this, he'll give Zelda one Might Crystal. These rare objects are how Zelda can upgrade the Swordfighter Form in Echoes of Wisdom.
