Ingredients (serves 4)
Vegetable oil, for cooking
1 onion, diced
1 pepper, diced
1 pack prepared garlic, ginger and chilli
4 chicken breasts, cubed
1 tsp garam masala
1 tsp chilli powder (optional)
1 tub Cook with M&S Spiced
Masala Sauce
Juice of 1 lemon
A handful of coriander, diced, plus extra to garnish
2 packs microwavable pilau rice
4 tbsp natural yogurt
2 tbsp crispy onions
Preheat the oven to 190C/170C fan/gas mark 5.
Fry the onion, pepper, chilli, ginger and garlic and chicken in a large pan with a splash of oil until the chicken is golden and the veg is soft.
Add the garam masala and chilli powder, stir in the Cook with M&S Spiced Masala Sauce, then simmer for 3 minutes. Add half the lemon juice and the coriander.
Pour half into an ovenproof dish and spoon over one of the packs of rice, then repeat.
Cover with foil and bake for 20 minutes. To serve, finish with the remaining lemon juice and coriander, yogurt and crispy onions.
