Ingredients (Serves 2) Prep time 5 minutes, cook time 5 minutes 1 tbsp vegetable oil 1 pack Honduran king prawns 1 pack prepared ginger, garlic and chilli 1 tbsp soy sauce Small handful coriander, chopped 1 pack mango & mangetout salad 1 pack bao buns 1 tub Sriracha mayo
Add 1 tbsp of vegetable oil to a hot pan. Add the prawns and the ginger, garlic and chilli mix and stir fry for 3 minutes. Splash on the soy sauce, remove from heat and stir through half the coriander.
Add the rest of the coriander to the mangetout salad.
Microwave the bao buns.
Spoon a little Sriracha mayo into the base, top with the mango and mangetout salad and finish with the prawns.
