Preheat oven to 350°F. Line 20-cup mini muffin pan with paper liners. 2. Combine flour, baking soda and salt; set aside. Using electric mixer, beat together butter, brown sugar and granulated sugar until light and fluffy. Beat in egg yolk and vanilla. Stir in flour mixture until blended; fold in half of the chopped Cookies & Creme. 3. Roll cookie dough into 20 balls; press into bottom of each prepared cup. Refrigerate until ready to use. 4. Cheesecake Layer: Beat cream cheese with sugar until smooth; beat in egg just until combined. Spoon over cookie layer in each cup. 5. Bake for 15 to 20 minutes or until cheesecake layer is set. Sprinkle with remaining chopped Cookies & Creme. Let cool completely on rack. Tip: For an over-the-top presentation, add a dollop of whipped cream to each cookie bite and garnish with more chopped Twix Cookies & Creme and a drizzle of caramel sauce.
