He throws seasonal veggies like leeks, purple broccoli, carrots and a grab-bag of tomatoes into an Ooni Roasting Pan. He seasons the veg lightly with just a bit of olive oil, salt, pepper and a glug of broth before launching the pan into a wood-fired Karu 2 Pro to give the chicken thighs a nice smoky, crispy caramelization.
