Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes (+ 30 minutes chilling time) Makes: 12 cookies Ingredients: 1 cup all-purpose flour, sifted Pinch salt 1/3 cup unsalted butter, at room temperature 3 tbsp granulated sugar 1 egg yolk 1/2 tsp vanilla extract 12 small lollipop sticks 12 Dove Dark Chocolate Eggs 3 pastel-colored icing tubes (pale yellow, baby blue and light pale pink) Instructions: 1. Preheat oven to 350˚F. Whisk flour with salt; set aside. 2. Using electric mixer, beat butter with sugar on high speed until light and fluffy. Beat in egg yolk and vanilla until light and fluffy. Reduce heat to low; gradually add flour mixture just until incorporated. Shape dough into flat disk; wrap with plastic wrap and refrigerate for 30 minutes. 3. On clean surface, roll out cookie dough into 1/3-inch thickness. Using 2 1/2-inch cookie cutter, cut out 12 cookies; arrange about 2 inches apart on two parchment paper–lined baking sheets. Slide lollipop sticks halfway into each cookie. 4. Bake on top and bottom racks of oven, switching and rotating baking sheets halfway through, for 10 to 12 minutes or until lightly golden around edges. Let cool completely on rack. 5. Place Dove Dark Chocolate Egg in center of each cookie, using dab of icing to adhere. Decorate with icing as desired, using 1 oz icing per cookie pop. Tip: For variation, substitute almond, orange or coconut extract for vanilla extract.
