 You actually can beat the red bird without using all of the shortcuts, but there are a couple of them. In context, refer to this video:

As soon as the race begins, do a quick boost. When you reach the final arrow, jump while sliding down the slope. When you're ready, proceed to the jumping pad.

From here, do a small hop and then boost on to the platform directly in front of you.

Continue boosting until you're able to smash through the obstacles.

Next, you can make small sprints to cross the construction beams. Do not land on the second beam to save some precious seconds, instead head straight to the other side onto the platform.

Having done jumps and boosts, now you can reach the launch pad after managing to clear the glass platforms.

When you're met with a row of launch pads, your best chance at building up speed is boosting into the edge of the nearest one.

As you slide down the hill, keep to your right. At the last arrow, leap to the right. On the next platform, with the boxes in your way, hover in midair and long boost.

You gotta boost after you jump when you reach the last arrow after you slide down again. Then, quickly walk onto the leaping pad by traversing over the rotating beams using short boosts. This may take a few attempts and a little bit of luck to nail right away.

As soon as you land on the jumping pad, be sure to boost near the bottom of the next launch pad.
