You should always try north of Hyrule Ridge if you want to make sure the stats are superior.

From here, once you have calmed it you are able to take it to the nearest stable to register it. In Breath of the Wild, the Highland Stable is one of the closest stables to the Giant Horse.
Unlike other horses, the Giant Horse doesn't have stamina, so mashing the A button does nothing to make him run. As much as you might love him, you can't change his mane. He also can't use the Ancient Horse Gear. In return, though, his 5-star Strength will let him one-shot all minor monsters and critters with a single barrel roll.
