Prep Time: 25 minutes Cook Time: 20 minutes Total Time: 45 minutes + 1 hour chilling time Makes: 24 sandwich cookies Ingredients: Chocolate Wafer Cookies: 1 ⅔ cups all-purpose flour 3/4 cup cocoa powder 1/2 tsp salt 1/4 tsp each baking powder and baking soda 3/4 cup unsalted butter, room temperature 3/4 cup sugar 1/4 cup packed brown sugar 1 egg 1 tbsp milk 1/2 tsp mint extract 1 cup M&M’s Green Milk Chocolate Candies Buttercream: 1/2 cup unsalted butter, room temperature 3 ½ cups confectioner’s sugar 3 tbsp milk 1 tsp green food coloring Instructions: 1. Chocolate Wafer Cookies: Whisk together flour, cocoa, salt, baking powder and baking soda in large bowl; set aside. Beat together butter, sugar and brown sugar using hand mixer until light and fluffy. Beat in egg until combined. Beat in milk and mint extract until smooth. Add flour mixture; beat on low speed until combined. Divide dough into 2 portions; wrap in plastic wrap and refrigerate for at least 1 hour or overnight. 2. Preheat oven to 350°F. Roll one portion of dough at a time to 1/4-inch thickness between 2 flour-dusted pieces of parchment paper. Using 2-inch round cutter, cut out cookies. Use spatula to transfer to parchment paper–lined baking sheets, spacing at least 2 inches apart. Gather and reroll scraps to cut out more rounds to make 48 cookies total. Press M&M’s Green Milk Chocolate Candies on top of cookies, dividing evenly. 3. Bake one sheet at a time for 8 to 10 minutes, rotating sheet back to front halfway, or until cookies are firm and lightly golden around edges. Let cool on baking sheet for 2 minutes; transfer to wire rack and cool completely. 4. Buttercream: Beat butter using hand mixer until light and fluffy. With mixer on low speed, add icing sugar, milk and food coloring; beat until blended and smooth. Increase speed to high and beat until frosting is light and fluffy. 5. Spread buttercream on the flat side of half the cookies. Sandwich with remaining cookies. Tip: • Instead of round cookie cutter, use shamrock or leprechaun cutters.
